Apple Fritter Waffle Donuts

A fun and easy twist on classic apple fritters, made in a waffle iron for a crispy, donut-like treat. Perfect for a quick dessert or breakfast.

For the Waffle Donuts

  • 1 medium apple (peeled, cored, and diced)
  • 1 large egg
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 tablespoon brown sugar
  • 0.5 teaspoon ground cinnamon
  • 0.25 cup granulated sugar
  • 1 pinch salt
  • 1.5 teaspoons vanilla extract
  • 3 tablespoons butter (melted)
  • 0.5 cup buttermilk
  • 2 tablespoons milk (for adjusting batter consistency)

For the Glaze

  • 1 cup powdered sugar
  • 2 tablespoons milk (for glaze)

Instructions

  1. Peel, core, and dice your apple into small, manageable pieces.
  2. In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, brown sugar, ground cinnamon, and salt.
  3. In a separate, medium-sized bowl, whisk together the egg, buttermilk, and vanilla extract.
  4. Melt the butter and add it to your wet ingredients. Give it another quick whisk.
  5. Pour the wet ingredients into the dry ingredients. Mix until just combined. Do not overmix! A few lumps are fine.
  6. Gently fold in your diced apple.
  7. Preheat your waffle iron according to the manufacturer’s instructions.
  8. Lightly grease your waffle iron.
  9. Pour approximately 1/4 cup of batter onto the hot waffle iron. Close the lid and cook until golden brown and cooked through (about 3-5 minutes). Repeat with the remaining batter, greasing the iron as needed between batches.
  10. While the waffle donuts are cooking or cooling slightly, whisk together the powdered sugar and milk until smooth for the glaze.
  11. Dip each waffle donut into the glaze or drizzle generously over them. Serve immediately.

Notes

For a gluten-free version, use a good quality gluten-free all-purpose flour blend. If the batter seems too thick, add a touch more milk. For a different glaze, you can use water or apple juice instead of milk.
