Apple Maple Cookies with Maple Glaze

  • 0.75 cup unsalted butter, softened
  • 0.5 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground ginger
  • 0.125 teaspoon nutmeg
  • 0.5 cup real maple syrup (Use the good stuff for the best taste.)
  • 1.5 cups grated apple (Use baking apples like Honeycrisp or Fuji.)

Maple Icing

  • 1 cup powdered sugar
  • 1 tablespoon heavy whipping cream
  • 1 tablespoon melted butter
  • 1 teaspoon maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined and smooth.
  4. In a separate medium bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, and nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Gently stir in the maple syrup and grated apple. The dough will be a little wetter.
  7. Use a rounded tablespoon to drop portions of dough onto the prepared baking sheets, about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden brown.
  9. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  10. While the cookies cool, prepare the maple icing by whisking together powdered sugar, heavy whipping cream, melted butter, and maple syrup in a small bowl until smooth and pourable.
  11. Once the cookies are completely cool, drizzle or spread the maple icing over the tops. Let the icing set before enjoying.

Notes

Store in an airtight container at room temperature for 3-4 days. For longer storage, freeze un-iced cookies for up to 2-3 months.
