A delicious and easy blueberry French toast casserole that is perfect for breakfast or brunch.

  • 2 cups fresh blueberries
  • 8 large eggs
  • 2 cups milk
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup powdered sugar (for serving)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together eggs, milk, cream, sugar, vanilla, cinnamon, and salt.
  3. Add cubed French bread and blueberries, gently folding to combine.
  4. Pour mixture into a greased baking dish.
  5. Cover and refrigerate for at least 1 hour (or overnight for best results).
  6. Bake uncovered for 45-55 minutes until golden brown.
