Brownie Peppermint Bark Pudding

A delightful layered dessert that’s as fun to assemble as it is to eat, and it’s absolutely perfect for any holiday gathering or even just a special weeknight treat.

Brownie Layer

  • 1 pan your favorite brownies (baked, cooled, and chilled, cut into 1-inch cubes)

White Chocolate Pudding Layer

  • 4 cups prepared and chilled white chocolate pudding (store-bought or homemade)

Peppermint Cheesecake Layer

  • 12 ounces cream cheese (softened)
  • 0.75 cup granulated sugar
  • 1.25 cups heavy whipping cream
  • 0.33 cup crushed mint candy canes or peppermints (adjust amount to preference)
  • 1 teaspoon peppermint extract (adjust to preference)

Whipped Cream Layer

  • 1.5 cups heavy whipping cream
  • 0.25 cup powdered sugar
  • 0.33 cup crushed mint candy canes or peppermints (for final touch)

Optional

  • 0 hot fudge sauce (for drizzling)

Instructions

  1. Cut chilled brownies into 1-inch cubes and arrange them evenly at the bottom of your trifle dish or individual serving glasses. Fill in any gaps by breaking up some cubes.
  2. Gently spread the white chocolate pudding evenly over the brownie layer.
  3. In a medium bowl, beat softened cream cheese and granulated sugar until smooth.
  4. Gradually add heavy whipping cream to the cream cheese mixture and beat until well combined and holding soft peaks.
  5. Gently fold crushed mint candy canes/peppermints and peppermint extract into the cream cheese mixture.
  6. Spoon the peppermint cheesecake mixture evenly over the white chocolate pudding layer.
  7. In a separate, chilled bowl, beat heavy whipping cream and powdered sugar until stiff peaks form.
  8. Gently fold the remaining crushed mint candy canes/peppermints into the whipped cream.
  9. Spoon or pipe the peppermint whipped cream on top of the trifle.
  10. Optional: Drizzle with hot fudge sauce before serving.

Notes

This dessert can be assembled up to the cheesecake layer a day in advance. Add the whipped cream topping and any drizzles just before serving.
