Creamy Balsamic Chicken & Mushrooms

Tender chicken bathed in a dreamy, tangy, and utterly delicious balsamic sauce with sautéed mushrooms. This comforting dish is fast, easy, and perfect for weeknights or special occasions.

  • 2 pounds boneless, skinless chicken breasts (about 4)
  • 1.5 teaspoons kosher salt (divided)
  • 0.25 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 8 ounces sliced cremini mushrooms (also known as baby bellas)
  • 2 tablespoons all-purpose flour
  • 1 cup half-and-half or whole milk
  • 0.5 cup low-sodium chicken broth
  • 2 tablespoons balsamic vinegar

Instructions

  1. Pat the chicken breasts dry with a paper towel. Season both sides generously with 1 teaspoon of kosher salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Once shimmering, add seasoned chicken breasts and cook for 6-8 minutes per side until golden brown and cooked through. Remove chicken from skillet and set aside.
  3. Add butter to the same skillet. Once melted, add sliced mushrooms and remaining 1/2 teaspoon kosher salt. Cook, stirring occasionally, for 5-7 minutes until mushrooms are soft and golden brown.
  4. Sprinkle flour over the mushrooms and stir to combine. Cook for 1 minute, stirring constantly.
  5. Gradually whisk in half-and-half (or milk) and chicken broth until smooth. Bring to a gentle simmer, stirring constantly, until sauce thickens.
  6. Stir in balsamic vinegar.
  7. Return chicken breasts to the skillet and spoon sauce over them. Simmer for 2-3 minutes to allow flavors to meld.

Notes

This dish is fantastic served over pasta, rice, mashed potatoes, or with crusty bread. A simple green salad or steamed broccoli makes a perfect complement.
