Creamy Cottage Cheese Cauliflower Soup

  • 2 tablespoons olive oil
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 head cauliflower (chopped)
  • 4 cups vegetable broth (low-sodium if preferred)
  • 1 cup cottage cheese (full-fat)
  • 1 teaspoon ground cumin
  • to taste salt
  • to taste pepper
  • chopped chives (for garnish)

Instructions

  1. Heat your olive oil in a large pot or Dutch oven over medium heat. Add your chopped onion and let it soften and become translucent, about 5-7 minutes. This sweetens the onion and builds the flavor base.
  2. Toss in your minced garlic and cook for just another minute until it’s wonderfully fragrant. Keep an eye on it so it doesn’t burn!
  3. Now, add your chopped cauliflower and the vegetable broth to the pot. Give it a good stir, bring it all to a boil, then reduce the heat to low, cover the pot, and let it simmer. You want that cauliflower to get super tender, which usually takes about 15-20 minutes.
  4. Once the cauliflower is fork-tender, remove the pot from the heat. This is where the magic really happens! Stir in the cottage cheese and the ground cumin. The cottage cheese will start to melt into the hot soup, creating that amazing creamy texture.
  5. Now it’s time to make it smooth! The easiest way is to use an immersion blender right in the pot. Carefully blend the soup until it’s wonderfully smooth and creamy. If you don’t have an immersion blender, no worries! You can carefully transfer the soup in batches to a regular blender and blend until silky. Just be sure to vent the lid so steam can escape.
  6. Taste your soup and add salt and pepper as needed. This is your chance to make it perfect for your palate.
  7. Ladle your beautiful, creamy soup into bowls. Garnish with those lovely chopped chives for a burst of freshness and color. Serve it hot and savor every spoonful!

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop or in the microwave. A splash of broth or water may be needed if thickened. Freezing is possible but may alter texture due to cottage cheese.
