Whipped Feta with Roasted Garlic

A creamy, dreamy whipped feta dip with mellow roasted garlic and fresh herbs, perfect for any occasion.

  • 1 head garlic (for deep, sweet flavor)
  • 1 cup crumbled feta cheese (grab your favorite kind)
  • 0.5 cup Greek yogurt (for extra creaminess and tang)
  • 2 tablespoons olive oil (good quality)
  • 1 tablespoon lemon juice (for a little zing)
  • 1 tablespoon chopped fresh herbs (parsley, dill, or oregano)
  • 0 to taste salt
  • 0 to taste pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice about 1/4 inch off the top of the head of garlic to expose the cloves. Place the garlic on a piece of aluminum foil, drizzle with 1 tablespoon of olive oil, and wrap snugly.
  3. Roast the garlic in the preheated oven for 30-40 minutes, or until soft and golden brown.
  4. Once cooled enough to handle, squeeze the soft roasted cloves out of their skins into a food processor.
  5. Add the crumbled feta cheese, Greek yogurt, remaining 1 tablespoon of olive oil, and lemon juice to the food processor.
  6. Process until smooth and creamy, scraping down the sides as needed.
  7. Stir in the chopped fresh herbs.
  8. Season with salt and pepper to taste.

Notes

This whipped feta is best enjoyed fresh, but leftovers can be stored in an airtight container in the refrigerator for 3-4 days. If it thickens, stir before serving. It can also be a thoughtful homemade gift.
