  • 2 boneless, skinless chicken breasts
  • 3 cloves garlic, minced
  • 1 bunch fresh parsley, chopped (for garnish)
  • 14.5 oz diced tomatoes, undrained
  • 1 small yellow onion, chopped
  • 4 cups low-sodium chicken broth
  • 2 tbsp cornstarch
  • 1 tsp Italian seasoning
  • 0.5 tsp red pepper flakes (optional)
  • 0 salt (to taste)
  • 0 black pepper (to taste)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese

Instructions

  1. First things first, place your chicken breasts right into your trusty crock pot. Then, add the minced garlic, the whole can of diced tomatoes (juice and all!), your chopped yellow onion, and pour in all that chicken broth.
  2. Now, let’s give it some flavor! Stir in that Italian seasoning and those red pepper flakes (if you’re using them). Season generously with salt and black pepper. Trust your taste buds here!
  3. Pop the lid on your crock pot, and let it cook. You can set it on LOW for 4-6 hours, or if you’re in a bit more of a rush, HIGH for 2-3 hours works too. Just wait until that chicken is cooked through and tender.
  4. Once the chicken is ready, carefully remove the breasts from the crock pot. Place them on a plate or cutting board and shred them using two forks. Easy peasy!
  5. In a small bowl, take about 1/2 cup of that warm broth from the crock pot and whisk it together with your cornstarch until it’s super smooth. This is called a “slurry,” and it’s our secret to a beautifully thickened soup. Pour this mixture back into the crock pot.
  6. Now for the best part! Add your shredded chicken back into the pot. Then, pour in the heavy cream and all that glorious grated Parmesan cheese.
  7. Give everything a good stir until it’s all combined and you can see the soup magically thickening up. Oh, the aroma!
  8. Finally, stir in your chopped fresh parsley. This adds a lovely pop of color and a bright, fresh flavor that complements the rich soup perfectly.

Notes
