A delicious and hearty soup made with chicken, gnocchi, and vegetables cooked in a slow cooker.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 3 cups chicken broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 pound gnocchi
  • 1 cup heavy cream
  • 2 cups spinach, chopped
  • Salt and pepper to taste

Instructions

  1. In a skillet, heat olive oil over medium heat and sear the chicken breasts until golden brown on both sides.
  2. Transfer the chicken to the slow cooker and add chicken broth, carrots, celery, onion, garlic, thyme, and basil.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  4. Remove the chicken, shred it, and return it to the slow cooker.
  5. Add the gnocchi and heavy cream, cooking for an additional 30 minutes.
  6. Stir in the spinach until wilted, season with salt and pepper, and serve.

Notes

  • This soup can be made ahead and stored in the refrigerator for up to 3 days.
  • For a lighter version, substitute heavy cream with milk or a dairy-free alternative.
