Crockpot Lasagna Soup

A comforting and easy dump-and-go slow cooker soup that captures all the delicious flavors of classic lasagna, perfect for busy weeknights.

  • 1 lb ground beef
  • 1 whole onion (diced)
  • 4 cups beef broth
  • 1 can (15 oz) crushed tomatoes
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • to taste salt
  • to taste pepper
  • 1 cup ricotta cheese (for topping)
  • 1 cup shredded mozzarella cheese (for topping)
  • for garnish fresh basil

Instructions

  1. Brown the ground beef and diced onion in a skillet over medium-high heat until nicely browned and the onion is softened. Drain off any excess grease.
  2. Transfer the browned meat and onion mixture to a slow cooker.
  3. Pour in the beef broth, crushed tomatoes, garlic powder, Italian seasoning, salt, and pepper. Stir to combine.
  4. Cover and cook on high for 2-3 hours, or on low for 4-6 hours.
  5. About 30 minutes before serving, stir in the broken lasagna noodles.
  6. Ladle the soup into bowls.
  7. Top each bowl with dollops of ricotta cheese, shredded mozzarella, and fresh basil. Add an extra grind of pepper if desired.

Notes

For variations, consider using ground turkey or Italian sausage instead of beef, chicken broth instead of beef broth, or other pasta shapes like spaghetti or penne. Add vegetables like bell peppers, carrots, or celery with the onions for an extra boost. A pinch of red pepper flakes can add a gentle kick.
