Cozy Crockpot Sausage Casserole

A comforting and savory sausage and potato casserole made easily in a slow cooker, perfect for weeknight dinners.

  • 1 lb smoked sausage (sliced)
  • 4 potatoes (diced)
  • 1 onion (chopped)
  • 1 bell pepper (chopped)
  • 14.5 oz diced tomatoes (undrained)
  • 2 cups chicken broth
  • 1 tsp paprika

Instructions

  1. Combine all ingredients in your slow cooker: sliced smoked sausage, diced potatoes, chopped onion, chopped bell pepper, undrained diced tomatoes, chicken broth, and paprika. Give it a gentle stir.
  2. Cook on Low for 6-8 hours or on High for 3-4 hours, until potatoes are fork-tender and sausage is heated through.

Notes

This casserole can be made ahead by assembling ingredients in the slow cooker insert the night before and refrigerating. It might require a slightly longer cooking time when starting from cold. Leftovers can be stored in the refrigerator for 3-4 days and reheated in the microwave, on the stovetop, or in the slow cooker on the ‘Warm’ setting.
