These Easy Korean Beef Bowls are a weeknight dinner dream come true, featuring flavorful savory-sweet beef and a crisp, refreshing slaw, all brought together with a creamy, dreamy sauce. They are fast, easy, and crowd-pleasing, making them perfect for busy days.

Ingredients

Scale

Quick Slaw

  • 4 cups shredded cabbage (Feel free to use a bag of pre-shredded coleslaw mix, or mix up your favorite kinds like Napa, green, or purple for extra color!)
  • 1 cup shredded or grated carrots (Again, pre-shredded is your friend here!)
  • 1 cup chopped cucumbers (English cucumbers work great as they have fewer seeds and thinner skins.)
  • 0.25 cup chopped fresh cilantro (If you’re not a cilantro fan, don’t worry! Parsley or even a little green onion would be lovely too.)
  • 2 tablespoons lime juice (Freshly squeezed is always best for that bright, zingy flavor.)
  • 2 tablespoons soy sauce (Low-sodium is preferred to keep things from getting too salty.)
  • 2 tablespoons olive oil (A good quality extra virgin olive oil adds a nice subtle flavor.)
  • 0 to taste salt and pepper (Don’t forget to season!)
  • 0 to taste Sriracha (For a little kick. Adjust this based on how much heat you like!)

Sauce to End All Sauces

  • 0.5 cup sour cream (This is our creamy base.)
  • 0.5 cup mayonnaise (For that extra richness and smooth texture.)
  • 3 tablespoons fresh lime juice (Yep, more lime! It balances the richness perfectly.)
  • 1 teaspoon sriracha sauce (Add a little more if you like it spicy!)
  • 1 teaspoon garlic powder (Easy flavor boost!)

Korean Beef

  • 1.75 pounds lean ground beef (You can also use ground turkey or chicken if you prefer.)
  • 0.5 cup low-sodium soy sauce (The backbone of that delicious Korean flavor.)
  • 0.25 cup unseasoned rice vinegar (This adds a subtle tang that brightens everything up.)
  • 2 tablespoons light brown sugar (Just enough sweetness to balance the savory notes.)
  • 2 tablespoons toasted sesame oil (This is a must for that distinct nutty aroma and flavor!)
  • 1 tablespoon fresh ginger or ginger paste (Ginger adds a wonderful warmth and spice.)
  • 1 tablespoon minced fresh garlic (4 to 5 cloves) or 1 teaspoon garlic powder (I love using fresh garlic for a more pungent flavor, but powder is a quick swap.)

For Serving (Optional)

  • 0 Hot, cooked rice (Jasmine or basmati are excellent choices.)
  • 0 Naan bread (Perfect for scooping up any extra sauce!)
  • 0 Avocado slices (Adds a creamy, healthy fat element.)
  • 0 Fresh lime wedges (For an extra squeeze of freshness.)
  • 0 Chopped cilantro (Because more cilantro is always a good thing!)

Instructions

  1. Prepare the Quick Slaw: Grab a medium bowl. Toss in your shredded cabbage, carrots, cucumbers, and cilantro. In a separate small bowl, whisk together the lime juice, soy sauce, and olive oil. Pour this dreamy dressing over your slaw ingredients. Give it all a good toss to combine. Now, season with salt, pepper, and a dash of sriracha to your liking. Pop this in the fridge while we make the rest.
  2. Prepare the Sauce to End All Sauces: In another small bowl, combine the sour cream, mayonnaise, lime juice, sriracha, and garlic powder. Stir it all up until it’s smooth and creamy. Set it aside too. I like to taste this and adjust the sriracha – so good!
  3. Cook the Korean Beef: Get a large skillet nice and hot over medium-high heat. Add your ground beef and break it up with a spoon as it cooks until it’s nicely browned. Don’t forget to drain off any excess fat – this helps keep the dish from feeling too greasy.
  4. Flavor Town Time: Now, add the star players to the skillet with the beef: the low-sodium soy sauce, rice vinegar, brown sugar, toasted sesame oil, ginger, and garlic. Stir everything together really well. Let it simmer for about 2-3 minutes, or until the sauce has thickened up just a bit and beautifully coated every piece of beef. Oh, the aroma!
  5. Assemble the Bowls: Time for the grand finale! Divide your hot, cooked rice into serving bowls. Spoon a generous portion of that glorious Korean beef over the rice. Add a big scoop of your crisp, refreshing slaw. And finally, drizzle that magical “Sauce to End All Sauces” all over the top. Serve it up with any of your favorite optional toppings like slices of creamy avocado, a squeeze of fresh lime, or a sprinkle of extra cilantro. Enjoy!

Notes

The beauty of this recipe is its flexibility! Feel free to spice it up, add more veggies, or use different proteins and grains. Prep ahead power: The slaw dressing and creamy sauce can be made a day in advance. Pre-shredded veggies are a great shortcut.
