Fall Apple Cider Stew Over Creamy Mashed Potatoes

A warm and comforting fall stew made with tender beef, sweet-tart apple cider, and served over creamy, cheesy mashed potatoes. Perfect for cozy weeknights or a relaxed weekend meal.

For the Stew

  • 0.75 lb top sirloin (cut into 1-inch cubes)
  • 2 medium carrots (peeled and diced)
  • 1 large onion (diced)
  • 0.5 cup beef broth
  • 1 tbsp olive oil
  • 2 cups apple cider (100% pure)
  • salt (to taste)
  • pepper (to taste)

For the Mashed Potatoes

  • 6 large potatoes (peeled and quartered)
  • 2 tbsp butter
  • 1 cup sharp cheddar cheese (shredded)
  • 0.25 cup milk
  • 0.25 cup sour cream

Garnish

  • 3 tbsp chives (chopped)

Instructions

  1. Season the sirloin cubes generously with salt and pepper.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the sirloin cubes on all sides, then remove and set aside.
  3. Add diced onion to the pot and cook until softened, about 5-7 minutes.
  4. Add diced carrots and cook for another 3-4 minutes.
  5. Return the browned sirloin cubes to the pot.
  6. Pour in the apple cider and beef broth. Stir gently and bring to a simmer.
  7. Reduce heat to low, cover, and simmer for at least 1 hour, or until the beef is tender.
  8. While the stew simmers, place peeled and quartered potatoes in a large pot, cover with cold water, and add salt.
  9. Bring water to a boil, then reduce to a simmer and cook for 15-20 minutes, or until potatoes are fork-tender.
  10. Drain the potatoes well. Return the empty pot to low heat for 1-2 minutes to evaporate excess moisture.
  11. Add butter, milk, sour cream, and shredded cheddar cheese to the pot.
  12. Mash the potatoes until smooth and creamy. Taste and adjust seasoning with salt and pepper if needed.
  13. Spoon mashed potatoes into bowls.
  14. Ladle the apple cider stew over the mashed potatoes.
  15. Garnish with chopped chives.

Notes

This stew tastes even better the next day. You can prepare the stew up to a day in advance and reheat gently on the stovetop. Vegetables can also be prepped the day before.
