Cozy French Onion White Beans

A quick and easy weeknight delight featuring comforting caramelized onions and creamy white beans, perfect for a busy evening or as a thoughtful homemade gift.

  • 2 tablespoons butter (unsalted)
  • 1 white onion (thinly sliced)
  • 3 cloves garlic (minced)
  • 2 (400g) tins white beans (drained and rinsed)
  • 1 tablespoon balsamic vinegar
  • 2 sprigs rosemary (finely chopped)
  • 3 tablespoons crème fraîche
  • 2 tablespoons water
  • 20 g Pecorino cheese (grated)
  • salt (to taste)
  • freshly ground black pepper (to taste)
  • 1 tablespoon extra virgin olive oil

Instructions

  1. Melt the butter in a large pan over medium heat. Once it’s shimmering, add your thinly sliced white onion. Cook, stirring every so often, for about 10 to 15 minutes. You’re looking for them to soften up and get a lovely, light golden-brown color. This is where all that delicious French onion flavor starts to build!
  2. Toss in your minced garlic and cook for just about 1 minute, until you can really smell its wonderful aroma. Be careful not to burn it!
  3. Now, stir in your drained white beans, the balsamic vinegar, and your finely chopped rosemary. Give it all a good mix to coat everything.
  4. In a small bowl, whisk together the crème fraîche and the water until you have a smooth, pourable mixture. This is going to give our beans that luscious, creamy texture.
  5. Pour that beautiful crème fraîche mixture into the pan with the beans and onions. Stir gently to combine everything. Let it simmer on low heat for about 5 to 7 minutes. This is where all those amazing flavors get to know each other and the sauce thickens up just perfectly.
  6. Now it’s time to taste! Season your beans generously with salt and freshly ground black pepper. Adjust it until it tastes just right to you.
  7. Drizzle a little extra virgin olive oil over the top. It adds a lovely sheen and a touch of richness.
  8. Serve your French Onion White Beans immediately, right from the pan, topped with a sprinkle of that grated Pecorino cheese. Isn’t it pretty?

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheat well on the stovetop or in the microwave. Freezing is possible for up to 1 month, though texture may change slightly.
