Honey Garlic Roasted Carrots

Quick, easy, and incredibly flavorful honey garlic roasted carrots. A perfect sweet and savory side dish for any meal.

  • 1.5 pounds carrots (peeled and cut into uniform sizes)
  • 2 tablespoons unsalted butter (melted)
  • 2 tablespoons honey
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon paprika (optional)
  • 1 teaspoon lemon juice (optional)
  • 0 Fresh parsley (chopped (for garnish))

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Whip up the magic sauce! In a big bowl (the one you’ll toss the carrots in later), whisk together the melted butter, honey, minced garlic, olive oil, salt, pepper, dried thyme, and your optional paprika and lemon juice. I like to give this a good swirl until it’s all blended into a beautiful, fragrant mixture.
  3. Coat those carrots! Add your prepared carrots to the bowl with the honey garlic mixture. Use your hands (the cleanest ones, of course!) or a big spoon to toss them around until every single carrot is beautifully coated. You want them to look glossy and ready for their close-up.
  4. Spread ’em out! Grab a baking sheet and spread your coated carrots in a single layer. This is super important! If they’re all piled up, they’ll steam instead of roast, and we want those lovely caramelized edges.
  5. Roast to perfection! Pop that baking sheet into your preheated oven. Roast for about 20-25 minutes. About halfway through, give them a little flip so they brown evenly on all sides. You’re looking for them to be tender when you poke them with a fork and have those delightful little golden-brown spots.
  6. Garnish and serve! Once they’re done, take them out of the oven and sprinkle generously with fresh chopped parsley. This is the finishing touch that makes them look like you slaved away for hours! Serve them warm and watch them disappear.

Notes

Can be made vegan by substituting butter with vegan butter or extra olive oil, and honey with agave nectar or another liquid sweetener. Can also add parsnips or sweet potatoes, cut to a similar size. For a spicy kick, add red pepper flakes. For more flavor, add rosemary, sage, or citrus zest.
