Cozy & Delicious Stuffed Bell Peppers

A comfort food classic, these stuffed bell peppers are easy to make, quick enough for a weeknight dinner, and guaranteed to bring smiles to your table. Packed with ground beef, rice, and savory seasonings, and topped with melted mozzarella, they’re a crowd-pleasing favorite.

  • 6 Bell Peppers (Rainbow of colors – red, yellow, orange, and green)
  • 1 small Yellow Onion (diced)
  • 2 tablespoons Olive Oil
  • 1 lb Lean Ground Beef (or turkey or chicken)
  • 1 tablespoon Minced Garlic
  • 1 (14.5 ounce) can Petite Diced Tomatoes
  • 1 cup Cooked Long-Grain White Rice
  • 0.5 – 1 Kosher Salt (to enhance flavors)
  • 1 teaspoon Black Pepper
  • 2 teaspoons Oregano
  • 0.5 teaspoon Red Pepper Flakes (optional)
  • 0.25 cup Grated Parmesan Cheese
  • 1 cup Shredded Mozzarella Cheese (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice off the tops of the bell peppers and scoop out the seeds and white membranes.
  3. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until soft and translucent (about 5 minutes).
  4. Add ground beef to the skillet and cook, breaking it up with a spoon, until browned. Drain off excess grease.
  5. Stir in minced garlic and cook for 1 minute more until fragrant.
  6. Add diced tomatoes, cooked rice, salt, black pepper, oregano, and optional red pepper flakes. Stir to combine and simmer for 2-3 minutes.
  7. Stir in the grated Parmesan cheese.
  8. Spoon the filling evenly into the hollowed-out bell peppers.
  9. Arrange stuffed peppers in a baking dish. Cover tightly with foil and bake for 30 minutes.
  10. Remove foil, sprinkle shredded mozzarella cheese over each pepper, and bake for another 10-15 minutes, or until cheese is melted and golden brown.

Notes

These stuffed peppers can be assembled up to a day in advance and stored in the refrigerator. For softer peppers, you can par-boil them for 5-7 minutes before stuffing, or bake them covered for a bit longer before adding the cheese.
